Todd and Ramiro’s Famous Memphis Rub

If you haven’t made a rub before I highly recommend trying this simple, flavorful mixture. Making your own costs a fraction of buying one in a store. Rubs are, after all, just a specific combination of relatively cheap spices. You don’t have to be exact with the ingredients either. Experiment … double the chili powder if you like it hot, reduce if you like it mild. Save some money and enjoy experimenting.

The amazing rub below — rumor has it — is from Charles Vergo’s famous Rendezvous restaurant in Memphis, Tennessee. I ate at Rendezvous about 100 times while working on a project and can attest it’s very close. Maybe not 100% but close.

Ingredients

2 1/2 tablespoons hot chili powder

2 tablespoons ground cumin

1 tablespoon ground coriander

1 tablespoon kosher salt

1/2 tablespoon paprika

1/2 tablespoon dark brown sugar

1/2 teaspoon freshly ground black pepper

1/4 teaspoon cayenne pepper

Steps

HIGHLY RECOMMEND: double or triple the recipe and store in a container to have on hand, especially during the summer grilling season.

Step 1

Combine all of the ingredients in a medium mixing bowl and whisk until even.

Enjoy!

Apply generously to all types of pork, particularly pork chops and pork shoulder roast, YUMMY!

Substitutions

Rubs aren’t an exact science to feel free to experiment and adjust amounts to taste.
