If the 2020 pandemic taught us one thing it is that we can not bake. Ramiro fought several rounds of sourdough bread and I wrestled numerous whole pumpkins into thoroughly inedible pies … the last one smelled like air that comes out of car tires. Thankfully we made it through the Whole Foods delivery wait list and can retire our baking gloves.
We thought baking would come easy partly because we’re good cooks but also because we have been making this delicious and relatively healthy pumpkin bread for years.
This recipe was shared to us back in 2013 by the Florida real estate agents who sold us our beach house. When discussing plans for the upcoming holidays, she mentioned making pumpkin bread was the one thing she looked forward to every Thanksgiving and Christmas. When we commented it sounded delicious she shared her recipe and we have been making it ever since.
So if baking is not your forte, I swear this recipe is for you. Just make sure to use baking soda and not baking powder, apparently they are not interchangeable. Don’t ask.
Ingredients
3 Cups all-purpose flour
1 tablespoon cinnamon
1 teaspoon salt
1 teaspoon baking soda
4 eggs
2 cups sugar
1 can organic pumpkin
1-1/2 cups canola oil
2 bags dark chocolate chips
1/2 cup crushed walnuts (optional)
Dulce de Leche for serving
Steps
Step 1
In a KitchenAid mixing bowl, combine the dry ingredients: flour, cinnamon, salt, and baking soda.
Step 2
In a separate bowl combine the wet ingredients: eggs, sugar, pumpkin, and oil.
With the KitchenAid on a low setting, add the wet ingredients to the dry ingredients.
Step 3
Remove the bowl from the KitchenAid and fold the chocolate chips and walnuts (optional) into the batter.
Step 3
Grease 2 pans with butter.
Divide the batter evenly into the pans.
Bake at 350° for 65 minutes.
Enjoy!
Cool for 10 minutes before removing from pan’s.
Top with Dulce de Leche as an icing or separately as a spread.
Substitutions
Swap out one of the bag of dark chocolate chips for sea salt caramel chips
